We know that this was due to unbelief. But what exactly did they NOT believe?That He was the Messiah?That He was a prophet?That He could heal?That He could do miracles?

Just a personal thought:John 20:30-31might be some insight.Per John: Miracles were to be a sign of who he is and was. Perhaps no amount of miracles would have convinced the majority there who he was.

Patrick's suggestion of John 20:30-31is correct. John chose 7 of Jesus' many miracles/signs, records them in his Gospel, then tells his readers why they were chosen--to create belief in the fact that Jesus was/is Messiah and that in believing the person would obtain eternal life.
